The canopy refers to all the above-ground vine parts — shoots, leaves, and fruit. Managing the canopy is one of the most important viticultural tools because it directly influences: grape ripening (more sun exposure accelerates ripening), disease pressure (dense canopies trap moisture and encourage fungal diseases like botrytis and mildew), grape composition (sunlight affects sugar, colour, and flavour compound development), and yield (controlling shoot number limits grape production).
Common canopy management techniques include: leaf removal (removing leaves around the fruit zone for better sun exposure and airflow); shoot positioning (tying shoots upward to keep them from tangling); shoot thinning (removing excess shoots to concentrate growth into fewer bunches); and choosing vine training systems (VSP — vertical shoot positioning, or sprawl systems — which affect canopy shape).
In cool climates, the goal is often to maximise sun exposure — the grapes struggle to ripen and need all the warmth they can get. In hot climates, some shading may be desirable to prevent sunburn and preserve acidity.
