Solera System
A fractional blending system used in Sherry and some other fortified wine production, where wine is progressively blended through a series of barrels to achieve a consistent style across multiple vintages.
In depth
The solera system uses a series of barrels arranged in "scales" (called criaderas). The bottom level, known as the solera, contains the oldest wine. The levels above it contain progressively younger wines. When wine is drawn for bottling (typically no more than one-third of the solera at a time), the emptied space is topped up with wine from the scale above, which in turn is topped up from the next, and so on back to the newest wine.
Because the system is never completely emptied, every bottle of solera Sherry contains a blend of wines from many different vintages. The oldest wine in the solera may theoretically contain fractional amounts dating back decades. This creates a consistent house style that transcends any single vintage's characteristics.
The system is fundamental to the production of all fino, manzanilla, amontillado, and oloroso Sherries from Jerez. It is also used for some Madeira wines and Tawny Port.
At Level 3, candidates must explain the mechanism of the solera (blending from oldest to youngest through the scales) and understand why no solera Sherry carries a vintage year — it is always a multi-vintage blend.
